One of the best things about living and working in Hong Kong is how naturally cultures blend—especially when it comes to food.

This morning, I enjoyed a freshly brewed coffee with a toasted bagel, a Western-style breakfast that wouldn’t feel out of place in New York. Just one MTR stop later, I sat down to enjoy a bowl of traditional Chinese 牛肚河粉 (beef tripe rice noodles)—a deeply local favorite.
